Avocado Toast & Poached Eggs

I know, avocado toast, eye roll. What a millennial recipe according to latest news reports and the brunch menus of instagramable restaurants but hear me our in this one. I’m not a huge fan of avocados unless of course it’s my mom's amazing guac (recipe for another time). But lately I’ve realized since I very rarely get the chance to consistently eat full meals throughout the day since I spend all my time chasing a toddler around, I need to bulk up my breakfast which I can usually eat uninterrupted during nap-time. Since my son loves avocados as a snack, I’ve always got them on hand and decided to incorporate one into my breakfast. It’s quick, it’s easy and it’s filling!

 

 

Ingredients 

Seeded Toast (or whatever you like)

1 Medium Avocado

Pinch of Salt, Pepper & Garlic Powder

Tabasco sauce to taste (I do about 3-4 drops)

2 eggs (poached whatever way you know how)

Goat Cheese (to taste)

 

Method

- Toast your bread and poach your eggs. While your eggs are poaching...

- Mix together your avocado, salt, pepper, garlic powder and tabasco sauce in a bowl using a fork to smash your avocado. 

- Spread your avocado spread evenly over your toast and place your poached egg on top. I like to sprinkle another tiny pinch of salt and pepper on top of the egg. 

- Crumble some soft goats cheese over the top (if you like)

 

I usually only do one piece of toast and 2 eggs because 2 pieces of toast is a little too filling for me. That's it! Told you it was quick and easy! Enjoy!
